Hot Stuff

I love to eat out. However, attending college has placed me twelve hours away from my favorite restaurants, and now dining out has become a priority whenever i’m home. I could eat Punch Pizza for every meal, but after eating out for two straight weeks I reached my breaking point, and by the end of break I was craving some home cooking.

My sister and I could not decide on a recipe for dinner until we stumbled upon a gem of a recipe for orzo stuffed roasted red peppers, proving once again, Giada De Laurentiis will never steer you wrong.

I love this recipe because it’s healthy and the stuffings blend of vegetables, pasta, and herbs make this meal both hearty and fresh. Here are picture of the process!

The stuffing includes shredded zuccini, canned tomatoes, garlic, mint and orzo pasta cooked in chicken broth.
